Episode 111: Ash Hill View Deer Farm & Venison

*making grunting sounds.

*deer come running over.

“Eh. They’re looking at me! I don’t know what I’m saying. Probably talking dirty to them.”

-Ken Swett

If you’ve eaten venison, most likely it’s because you have a hunter in your life who is happy to share their bounty. But as we learn in this episode, there are a few Maine farmers who raise red deer for meat. Grazing on dozens of beautiful acres, these deer truly only have “one bad day.”

Unlike whitetail deer, European-native red deer are closer to elk in size. The meat is lean, packed with protein & available through Farmer Ken at Ash Hill View Deer Farm in Carmel.

You will love getting to know Farmer Ken with his hilarious & welcoming personality.

In the kitchen, Chef slow-cooks a venison shoulder rubbed with Ras el Hanout; Maggie teaches how to make healthy & filling jerky, and we end with a classic winter Tourtiere pie for leftovers.
